Easy Sugar Cookies


I'm sure some of you have noticed that I've been missing lately. I wish I could say it's because I've been busy doing all kinds of awesome fall activities, having dinner parties, watching movies, relaxing, drinking hot chocolate...... but no. Exhaustion pretty much sums up the last month or two. I blame the season change. My husband is suffering from the same fatigue. Unfortunately, the children are not. They are still their unbelievably energetic little selves.

Still, I'm always doing little activities with the kids. Even if I have to force myself, because let's face it, sitting on the couch can be a little more tempting than cutting pumpkins out of construction paper. Be honest. You know deep down you're a couch potato too. :)

So to keep everyone entertained, and to ensure that I have a snack during my rare couch potato moments, I try to find simple recipes for the kids to make. Sometimes it's bread, pizza dough, cake, pancakes and so on. But the other day it was sugar cookies. Cute, easy, yummy, sugar cookies. I planned to drizzle icing all over them, but then I thought maybe my kids would be eating enough sugar as is, so I skipped it. Probably a wise decision.


Easy Sugar Cookies
Original Recipe
Serving Size = 4 dozen
  • 2 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 egg
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  1. Preheat oven to 375F.
  2. Cream together the butter and sugar, in a mixer. Add the egg and mix.
  3. Mix together all of the dry ingredients and add to the mixture. Mix until just combined.
  4. Roll round teaspoon fulls, and place onto an ungreased cookie sheet.
  5. Bake 8 - 10 minutes or until golden.
  6. Let cool on wire racks.
