Homemade Pancake Mix
Pancake mix is very easy to make and much cheaper than buying from the store. I make 6 cups worth of pancake mix and store it in the fridge with a tight fitting lid to keep it fresh. Pyrex are my favorite containers to use because they are glass, the lids are BPA free and nothing goes to the trash.

  • 6 cups of unbleached all purpose flour
  • 2/3 cup of sugar
  • 2 tablespoons baking powder
  • 1 tablespoon of baking soda
  • 1 teaspoon of salt or just add a pinch of salt before cooking
Mix everything together and store. When you want pancakes, add some milk, an egg (optional) and vanilla (optional).

Homemade Brown Sugar
I rarely use brown sugar, so when I buy it pre-made it ends up sitting in my pantry for a lifetime. Of course, this increases the risk of the sugar turning hard and lumpy. If this happens, then you can blend it or place a slice of bread in with it overnight to put the moisture back into the sugar --- OR, you could make your own small portions of brown sugar, as you need them. Store them in an airtight container, in a cool dry place.

Homemade Brown Sugar Recipe
  • 1 cup of sugar
  • 1 tablespoon of molasses (2 tablespoons for Dark Brown Sugar)
Mix the two together for a few minutes until well blended (an electric mixer works best).

These are great DIY recipes! Packaged pancake mix costs so much more than a homemade mix - the mark up is incredible - this is a great way to save. Plus you have complete control over ingredients - no sneaky unpronoucable ingredients in your mix!

Very true! I forgot to mention that! You can easily control the ingredients. Sometimes I decrease the sugar and it still turns out well.

The faux buttermilk is a great idea. I like to sprinkle the coconut on top while it's cooking because when I flip the pancake, it toasts the coconut. But, it could be mixed in as well. And I love adding blueberries! Or (healthy eaters, look away!) chocolate chips. :)
