Lemon Squares


I love lemon bars, so when I found this recipe at Go Ahead and Snicker, I knew I would love it. My only concern was that it wouldn't have enough lemon flavor. But boy oh boy, that's not an issue at all. The lemon flavor is perfect, just strong enough. I cannot recommend this recipe enough. You will love it! 

Place the crust into the pan and smooth out.
I could have done a better job. hehe
Mix the eggs, sugar and lemon.
Add the flour and mix until just combined.
Pause to admire my adorable bowl. Part of a set.....
I'm addicted to bowls.

Ok ok, back to baking. Pour in the lemon mixture and bake.
Sugared Lemon Squares
Original Recipe By: Go Ahead and Snicker
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar, plus more for decorating
  • 1 stick unsalted butter, at room temperature
  • 2 tablespoons heavy cream (I've left this out and it still tastes great)
  • 4 eggs
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 cup granulated sugar
  • 3 tablespoons flour
  1. Preheat oven to 350F.
  2. Whisk together 1 cup of flour with the powdered sugar. Cut in the butter and cream until crumbs form. I used a food processor --- add the flour, cream and powdered sugar, pulse for a few second and then add the butter and cream. Pulse until crumbs form.
  3. Press the crumbs into an 8x8-inch square baking dish, building up 1/2 inch on all sides. Bake for 20 minutes or until edges are just golden.
  4. While the crust bakes (or when there are about 10 minutes left), prepare the filling. Beat the eggs, granulated sugar and lemon juice until pale, about 2 minutes. I used my stand mixer. Add the 3 tablespoons of flour and mix until just combined. Pour the mixture over the hot crust and return to the oven and bake for 20 - 25 minutes or until the filling is set. 
  5. Let cool completely. Using a knife dipped in hot water, slice into squares and remove from pan. Sprinkle with powdered sugar.
